RECIPE
4 ½ oz (112.5g) of softened butter
4 ½ oz(112.5g) soft brown sugar
1 egg beaten
7 oz self raising flour
Pinch of salt
4 ½ oz(112.5g) white chocolate, roughly chopped
1 ¾ oz (43.75g) brazil nut, chopped
STEPS
- Lightly grease several baking trays
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Gradually add the beaten eggs, beat well after each addition
- Sieve the flour and salt into the creamed mixture and blend well
- Stir in the chocolate and brazil nuts / walnuts
- Place heaped teaspoons of the mixture on to the prepared bake trays.
- Bake in a pre-heated oven, 375 (degrees Fahrenheit), gas mark 5, 190(degrees Celsius) for about 10-12 mins or until just golden brown.
- Transfer the cookies to wire racks. Leave to cool.
